Almond Butter Cookies Oh My!
These cookies are the brainchild of all those years of dipping apples into peanut butter and serving it to kids as an after school snack, only it has been upgraded from peanut butter to almond butter and baked all together in cookie form to serve alongside a glass of milk as a slow-carb cheat day dessert.
1/2 cup butter, softened
1/2 cup almond butter
1/4 cup honey
1/4 cup sugar
1/2 cup brown sugar
1/2 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 small-medium apple, diced (about 1/2 cup)
Preheat oven to 375° F and line baking sheets with parchment or silicon baking mats. In a large mixing bowl cream together butter, almond butter, honey and sugars. Mix in egg and vanilla until thoroughly combined. In a separate bowl, whisk together flour, baking soda and salt. Add to the butters and mix. Stir in diced apples.
Using a medium scoop, scoop cookies 2-3″ apart on baking sheets. Bake at 375° F for 10-12 minutes until edges are golden brown and centers are set. Remove from oven and allow to cool slightly on baking sheets before moving to wire racks to cool completely.
Makes 2 to 2 1/2 dozen cookies.
