Healthy Chicken Caesar Salad
The path to better health is paved with simple better decisions. One of the key better decisions you can make is replacing the typical burger and fries lunch with a salad or something containing more veggies. That doesn’t mean that you have to sacrifice on taste! This healthy caesar salad is punched up with all types of fresh ingredients pushing the protein and flavor factors up.
Romaine, navy beans, onion, fresh grated parmesan cheese, chicken breast, and home made alternative caesar dressing.
Ingredients
- Boneless skinless chicken breast
- Romaine Lettuce (torn into small pieces)
- 1/4 cup Fresh grated parmesan cheese
- 1 cup Navy Beans (if canned, drained and rinsed)
- 1/4 cup Onion (thinly sliced)
Saute’ the chicken breast, slice or tear apart and set aside to cool.
Assemble all other ingredients in a large bowl and toss. Drizzle with your favorite simple salad dressing and serve or make your own! Remember the dressing is where the unhealthy bits tend to hide.
Dressing: Healthy Caesar Vinaigrette
- 1/2 cup Extra virgin olive oil
- 1/4 cup Lemon juice
- 1/4 cup Plain low-fat yogurt
- 1 tsp Fresh minced garlic
- 1 tbsp Capers
- 1 tsp Dijon Mustard
Mix all the ingredients in a storagee container. Serve some and refrigerate or freeze the rest for future use.
Impressions
Surprisingly this dish took pretty long to make! You would think a salad would be quick. It would be next time if I made the dressing earlier and had it ready. Same thing with the chicken. I suggest batching those ahead of time to have them ready.
