3-Bean Tuna Salad with Avocado
I’m always on the lookout for meals with a great balance of protein, dietary fiber, and great taste. Once I find them I’m like Charles Barkley buying 5 of the same shirt in different colors.
THIS is one of those meals. It’s loaded with protein, good fats, fiber and it’s absolutely delicious! So put this one on your list of great post workout meals or great snacks. Let me know what you think.
Serves 2: 303 cals, 6.7g fat, 29 carbs, 31g protein
- 1/2 cup Kidney beans (drained and rinsed)
- 1/3 cup Navy beans (drained and rinsed)
- 1/3 cup Black beans (drained and rinsed)
- 1/2 cup Avocado (cubed)
- 1/4 cup Green onion (thin sliced)
- 1 can Tuna (drained)
Combine all ingredients in an large mixing bowl and toss with your favorite light dressing. I personally prefer the Paul Newman brand Lighten Up Honey Mustard. Trust me that makes it 100!
